Level 2 Award in Food Safety in Catering

Suitable for attendees working in either a catering or retail environment, who handle, prepares or serves food in the catering industry or wider field.

On completion of the course delegates will have greater awareness of food handler’s responsibilities within the law, an understanding of the basic principles of food hygiene such as controlling temperatures, food storage, food preparation, personal hygiene and cleaning of premises.

Know how to work safely so as to protect the food they serve from contamination to their customers.

By the end of this course, delegates will be able to:

  • Identify contamination and cross contamination hazards in food safety
  • Explain how contamination of food causes illness and injury
  • Explain the importance of personal hygiene and personal illness to food safety
  • Prevent or minimise the risk of cross contamination
  • Practice good temperature control procedures
  • Deal with stock and deliveries
  • Keeping the work area and equipment clean and tidy
  • Minimise food spoilage and correctly deal with waste
  • Identify and control pest prevention methods
  • Comply with food safety regulations

Debbie Clueit

Debbie spent the early part of her career at Sun Valley Foods in Herefordshire, initially as a Production Trainer and then rising to the role of Training Manager, delivering all aspects of Food Safety and HACCP Training. Since then, she has worked at Hartpury College as a Skills Training Adviser and later Academic Manager. She has also worked as Training and Development Manager at several other organisations and spent several years as a self-employed trainer and consultant. Debbie is an External Quality Assurer for the Chartered Institute of Environmental Health and has an engaging and inclusive teaching style.

Nicola Stevens

Nicola has had a diverse career to date, including many years working within a Herefordshire high school in a pastoral role, including small group teaching. Before joining Hoople, Nicola worked within a local care organisation, helping to support individuals to maintain their independence. For many years she has also volunteered for the Girl Guides, where she has delivered a range of training programmes. Nicola is passionate about delivering training that is not only fit for purpose but also fun, exciting and engaging. She has delivered training programmes including Food Safety across many different sectors and always receives excellent feedback.
